Roy is the youngest in a large family of noble merchants in Ul'Dah, making him a noble in classification. However, due to having so many siblings born before him, his inheritance that he would receive was very little. Definitely not enough to sustain a living off of unless he wanted to outright work under one of his six siblings. He decided to make his own way instead.
When he came of age, Roy left Ul'dah to train to become a knight, and during his training he got some taste for adventuring. After he completed his training, he decided to go further into adventuring as a lifestyle. Before too long though, he did eventually return home to Ul'Dah to reconnect with his family as a knight who could act as a guard for them when needed, and when he's not needed, he can easily continue his adventuring career.
